Browndie 2

So, last week I created yet some more brownies, some browndies I mean-yes brownd with a “D”, (because they are round, which I found hieghtened my brownie experience significantly.  I played around a bit with the shape and size and used everything from tiny pie tins to tini round cake tins.

PJ’s Browndies

Preheat the oven to 160° C (325° F)
You will need:

  • a round cake pan ( or 16 mini cake tins) buttered and floured.
  • ½ cup of unsalted butter
  • 1 cup of dark semisweet chocolate blended into small pieces
  • 3/4 cup plus 2 tablespoons sugar
  • ¼  teaspoon of course salt
  • 2 eggs
  • 1 ½ teaspoon of Vanilla or other flavouring
  • ¾ cups of flour
  • ¼  cup of walnuts
  • ¼  cup of chopped almonds
  • ¼ cup of ether chocolate chips or chopped dark chocolate

Place the 1-cup of blended up chocolate into a small saucepan and add the butter. Cook the butter and chocolate over medium heat until everything has melted. Remove from the heat and let cool for a few minutes.

Stir in the sugar and the eggs, one at a time, and mix in the vanilla. Then sift in the flour and mix in the nuts and chopped chocolate (or chocolate chips). Could not be easier right!

Put the batter into the prepared baking tins and bake until the centre looks just about firm (it took me about 20 minutes). Let cool and enjoy!
