Banana Cake/Muffins

I made that same mistake yet again! You know what I mean..going to the grocery store on an empty stomach! Well, this time is was that bad actually, (as I did not buy out half the store of this time). I caught myself standing in front of the cakes and muffins gazing at each creation and trying to figure out how they would taste. I either looked strange or lost all feeling of time, as someone tapped me on my shoulders and looked at me with a somewhat concerned look. It was a lady who then  asked me if I was OK. I spanned out of whatever it was I was in and put myself in the line. I ordered a banana cake, a nut cake, and a chocolate cake (no comments please!). I guess that I figured that since this was an organic supermarket, I could get away with eating…well anything in large quantities. Not quite, but anyway, I had not eaten a banana cake or anything banana for…well, in ages.

Banana is one of my “phase foods”, who know those foods that you just can never seem to get enough of? And then, all of a sudden the desire ceases to exist and you forget about it for a while? Well, that is the banana for me! Last year, I frequently began my mornings with a banana shake mixed in with other fruits and almond milk. I would also often close my culinary day with banana icecream made from frozen banana puree which I always had in my freezer once my bananas had become overripe and “ready”. It was always an integral part of my fruit salads last summer and whenever I was pressed for time and needed a boost of energy (and had no chocolate around), I would go for the high fiber-potassium rich banana.

One should never judge a book by its cover, however I really should have known, once my slice was cut. The cake was baked in a bundtcake form and sprinkled with just the right amount of powdered sugar on top. Once the lady behind the counter cut the first piece, which was to be mine, I noticed that there were no banana freckles, as I thought should be characteristic of a banana cake. But I was hungry and happy nonetheless, thinking that the cake’s flavours would jump out at me once I had taken my first bite of this freshly cut cake.

The banana cake was a huge disappointment : (

It was terribly dry-much drier than it appeared at first, and had not even a faint taste of banana (hence the lack of the banana freckles). I continued to take more bites in the hope of finding the “banana” somewhere? No, no and no. I wanted to “undo” this experience and decided by making my own banana cake, hoping that this would be more successful. I purchased bananas on my next grocery store visit and had to wait patiently for over a week for them to ripen-and then another three days-for it to over ripen. After the 10th day, and the day I was intended to turn them into a delicious cake, our cleaning lady had placed the bananas next to the bio-garbage tin and asked me for the bags to line the tin. “These things are disgusting and have to be thrown away now”, she said. When I told her what they were for, she game me a very skeptical glance. Then I asked her to join me in making the cake and we did! She absolutely loved the outcome, as did I and I hope that you do as well.

    FINALLY !!!
    The recipe to Paula’s FAMOUS Banana cake. Ive been bothering her for this recipe for about 10 years now. I will never forget the first time that i tasted her Banana Bread in Cologne ;)

    Thanks Paula… it was about time !

    Now ill run to the supermarket to get ready to make it…
